Ingredients:

  • 1 cup kale, spinach, or mixed greens
  • 100g beans of your choice (chickpeas, black beans, or kidney beans)
  • 1/4 of each coloured capsicum (roasted or raw), thinly sliced
  • 5 cherry tomatoes, halved
  • 1 baby cucumber or 1/2 regular cucumber, sliced
  • 1/2 cup roasted zucchini, chopped
  • 1/2 cup purple cabbage, finely shredded
  • 1/2 cup cooked quinoa
  • 1/4 cup apple or pear, thinly sliced
  • 1/2 – 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • Salt and pepper to taste

Instructions:

  1. Prepare the base: In a large bowl, add the kale, spinach, or mixed greens.
  2. Add the veggies and fruit: Mix in the roasted zucchini, purple cabbage, cherry tomatoes, capsicum, cucumber, and your thinly sliced apple or pear.
  3. Add the beans and quinoa: Gently toss the beans and cooked quinoa into the salad.
  4. Season: Drizzle the olive oil and balsamic vinegar over the salad. Season with salt and pepper to taste.
  5. Toss and serve: Gently mix everything together and serve fresh.
