Ingredients:
- 1 cup kale, spinach, or mixed greens
- 100g beans of your choice (chickpeas, black beans, or kidney beans)
- 1/4 of each coloured capsicum (roasted or raw), thinly sliced
- 5 cherry tomatoes, halved
- 1 baby cucumber or 1/2 regular cucumber, sliced
- 1/2 cup roasted zucchini, chopped
- 1/2 cup purple cabbage, finely shredded
- 1/2 cup cooked quinoa
- 1/4 cup apple or pear, thinly sliced
- 1/2 – 1 tbsp olive oil
- 1 tsp balsamic vinegar
- Salt and pepper to taste
Instructions:
- Prepare the base: In a large bowl, add the kale, spinach, or mixed greens.
- Add the veggies and fruit: Mix in the roasted zucchini, purple cabbage, cherry tomatoes, capsicum, cucumber, and your thinly sliced apple or pear.
- Add the beans and quinoa: Gently toss the beans and cooked quinoa into the salad.
- Season: Drizzle the olive oil and balsamic vinegar over the salad. Season with salt and pepper to taste.
- Toss and serve: Gently mix everything together and serve fresh.
